Meat free Monday’s 😋🍴 It is baltic cold outside and this spicy soup is perfect for a night like this. ❄️ How hard is it to get a decent photo of hot soup though?! I can’t take credit for the recipe for this one, this is a Granny special slightly adapted. Winter Soup.🥣 The ingredients I used were 2 onions, 3 carrots, 4 stalks of celery, 100g of red lentils, 2 cartons of passata, 300ml veg stock, 3 teaspoons of curry power, 1 teaspoon of lazy garlic, 1 teaspoon of cayenne pepper, 2 tablespoons of tomato puree, 5 drops of hot sauce (I’d ran out of Tabasco 🙈). My granny would cook this in a pot on the hob but as I wasn’t at home I just bunged it all in the slow cooker for 6 hours on low. If you don’t like things really spicy you can adjust the amounts of spices added and it’ll end up more of a tomato flavour. 🌶🍅 This makes 5 portions. Cost: 76p per portion (not including stock cupboard items, the dried spices and hot sauce) Calories: 177 calories per portion.
