Some days dinner is easy. Some days it’s a battle... Tonight’s dinner: chili, brown rice, pepper, clementine. Initially kiddo insisted he hates chili and wanted a different dinner. When I told him this was the only option on the menu for dinner, he said all he wanted was a clementine and a piece of cheese. Very well received breakfast with tomato and mushroom omelette and fresh cold navel orange. Eggs are a great superfood full of essential amino acids and healthy fats like Omega 3! They are so versatile and easy to cook. A common misconception, cholesterol in eggs has very little effect on your blood cholesterol levels. What you eat with eggs ie butter,bacon,sausages which have saturated and transfat are more likely to contribute to increase in cholesterol level (Australian heart foundation) We love those foods so I try not to keep them at home and only eat them when we go out for brunch. . . . Showcasing buttercup and acorn squash from @fiddlefootfarm. These beauties were roasted at 350 degrees for ⏰ 60min in a cast iron pan with whole smashed garlic cloves, mix of butter and olive oil and sprinkling of cinnamon, cumin, Kosher salt and ground pepper. Once roasted flesh scooped out and made into a Thai curry spiced soup 🥣 . . Ingredients with directions (roughly not sure of exact measurements): Buttercup and Acorn squash (roasted as above) red onion, diced and sautéed in olive oil and butter 1 tsp cumin 2 tsp ground coriander seed 1 tbsp red Thai curry paste (more if more heat desired) 4 cups of chicken broth 1 pack of creamed coconut 🥥 Blend until desired texture! Despite the whether we enjoy making homemade snacks , ( I’m trying to avoid any snack with unrecognized ingredients especially for my kids ! ) . Got you those 4️⃣ ingredients PB 🥜 🍌 Snicker Pops , they are cool , vegan , real simple to make and mostly super delish even in ❄️ whether ! . What you need ? ▪️Ice cream sticks ▪️Bananas 🍌 ▪️ Smooth Peanut 🥜 Butter @depindakaaswinkel my fav. ▪️ Crushed peanuts 🥜 ▪️ Organic Melted Unsweetened Chocolate 🍫 @santabarbarachocolate is 👌🏻 . Peel the bananas , insert carefully the ice cream sticks ( pay attention not too much so the stick doesn’t go out of the banana - insert till you feel that it holds well the banana ) and save in the freezer ( I tried for 30 min and for 1 hour - it’s really better to let it sit the max time so it get frozen ), while it’s in the freezer prepare the PB by heating it a little bit if it’s not smooth , and to make it easier put it in a long glass ( it really helps not to break since working with bananas could be so tricky ), then cover them with the Smooth PB and then roll in the crushed Peanuts , back to freezer for another hour . While it’s in the freezer melt the chocolate and dip the banana stick into the chocolate ( be careful not too hot should be the chocolate 🍫), now it’s ready you need to be patient and store in the freezer for another 1 hour at least and you could enjoy this snack for the weekend 😀😀 . When I'm on the run, I need a quick meal that is also healthy and nutritious 🏃‍♀️. These pre-packaged hard boiled eggs from @conestoga_eggs make eating healthy on the run easy and delicious. Today was a PD day for my kids (& students), so I was off lunch-making duty for the night. But when the morning rolled around I needed to prepare a quick breakfast that would hold me off until lunch. I knew I wouldn't get my morning recess snack (that I depend on!!), because I was in Church all morning celebrating our school board's 50th anniversary 🎉. So, I decided to pack myself a breakfast bento to take in the car.
