Today’s slow cooker lunch was taco soup, topped off with tortilla chips, sour cream, avocado and shredded cheese. 😋
Still gotta eat! .
Even on the tough days, the busy days, the stressful days....our bodies still need what they need. Problem is our minds are just so darn tired at those points that we can’t always pull through the energy we need to make the healthy meal. 🙋🏻♀️ .
Fair enough. But what if we keep it super simple and take as much of the effort out of it in that moment as we can? What if we make enough early on so we don’t need to find that strength again later in the week? What if we pull out our most adult-adult pants and just do what we know we need to do... but make it easy? .
Truth: I was not even interested in this soup as I made it. Also truth: I have been opening too many bags of too many chips and crackers when hunger DOES strike because it always comes back eventually. So, I made a plan! .
I whipped up soup to be that comforting midday hug I may need at lunchtime to pull me through the rest of the day. And it was a hit! Butternut and kabocha squash soup from @skinnytaste with coconut milk, shallots, nutmeg & stock. Topped mine with cheddar & @siggisdairy (see in stories). .
I put it in the slow cooker and didn’t think about it again for 8 hours. Then, I just mixed in the other ingredients and voila! Lunch for days (literally) officially making it unnecessary for me to eat random snacks and call them lunch. .
First delicious bowl was today with some flurries outside and a warm bowl of soup in my hands... like the Universe saying “aren’t you glad you did this for you?” ✨✨✨

I’m getting reorganized from back to back travel weekends. This was a perfect way to start the week.
Slow cooker paleo chili
2T avocado oil
2lbs ground meat (I often combine beef and bison)
1 onion chopped
3-4 garlic cloves, minced
2 cans diced tomatoes
24oz tomato sauce (I combine jarred marinara and canned sauce)
1/2C beef broth (I use what is opened🤷🏻♀️)
2T chili powder
2t cocoa powder
1/2t ground coriander
Salt + pepper
*2 cans kidney beans drained
Heat avocado oil over medium heat in skillet. Sauté onions. Add garlic. Add meat and cook until browned. While meat is cooking, add the rest of ingredients (except beans) into slow cooker. Use a slotted spoon and add meat. Set on low for 5 hours. *Strict paleo? Skip the beans. If you want to add beans, add during last 30 minutes. I opt fo keep them out and I had them in a separate bowl for kids to add in.
Prefer to use #instantpot? Sauté onion, garlic and brown meat on sauté setting. Add ingredients and switch to slow cooker setting. Enjoy!!
